Quick & Easy Salmon Cakes

This can be a last minute meal since it is made with 3 basic ingredients that you might already have in your pantry and refrigerator.  Those salmon cakes are delicious with a simple salad, veggies or of your choice or on their own

  • 2 6oz cans salmon
  • 2 whole eggs
  • 1/2 cup breadcrumbs (or almond flour)
  • 1 TBSP dried parsley or fresh chopped
  • salt and pepper to taste


  • 1. Preheat your pan or cast iron skillet.  Add oil of your choice, such as avocado oil.
    2. Put all the ingredients in a medium sized bowl and mix well.
    3. Form even patties.
    4. Add patties to pan or skillet and fry on one side for 3-5 minutes or until golden brown.
    5. Flip patties and fry on second side 3 -5 minutes. 
    6. Serve as desired
