Herbed Quark with Potatoes and Flax Seed Oil

- 16 oz quark cheese
- 2 pounds potatoes
- 4 oz flaxseed oil
- ½ cup chopped herbs (parsley, dill, chives, etc)
- salt & pepper to taste
Over low heat, boil the potatoes until done. Peel once they are cool enough to touch.
In a medium bowl, mix the quark cheese with the herbs. Season with salt and pepper to taste.
To serve, scoop some quark onto a plate, add potatoes, and drizzle liberally with flaxseed oil.
- if you can't find quark cheese you can also use ricotta or any other fresh soft cheese
- be sure to use the best and freshest potatoes you can find (such as German butterballs)
