Spiced Sourdough Apple Oat Cake
You will love this easy sourdough apple cake. Baked in a cast iron skillet and made with oat flour it is both rustic and delicious! You can make it gluten-free if you use a GF sourdough starter.

- 3 TBSP butter, melted
- 2 eggs
- ½ cup sourdough starter
- ½ cup maple syrup
- 2 tsp cinnamon powder
- ¼ tsp nutmeg, ground
- 1 ½ cup oat flour
- 1 tsp baking powder (if not fermenting, see notes)
- 3 medium aplles
- butter for the skillet
In a medium bowl combine the wet ingredients. Stir well.
Add the dry ingredients and stir to combine.
Peel, core, and cut your apples into chunks or slices.
Preheat your oven to 350˚F.
Melt some butter in a cast iron skillet.
Sautee the chopped apples until softened but not mushy
Add the cake batter right on top of the apples. If you like, you can mix the diced apples with the batter a bit
Bake at 350˚F for about 20 minutes or until the top of the cake is golden brown.
- This is perfect for your sourdough discard. Use GF sourdough starter if you want to avoid gluten.
- You can also just prepare the batter, cover the bowl, and leave it on the counter for a few hours for long fermentation.
- If using sweet apples, consider adding a little lemon juice.
- This recipe is also great with whole wheat flour or any other flour.
